NEW RECIPE - CACIO E PEPE
Discover the joy of making authentic Cacio e Pepe, a classic Roman pasta dish. With just three simple ingredients – Pecorino Romano cheese, black pepper, and pasta – this seemingly easy recipe is a delightful challenge. Learn the secrets to perfecting this traditional Italian favorite and bring the taste of Rome to your kitchen. Follow our tips for achieving the ideal creamy consistency and impress your guests with this timeless dish.
While traveling through Rome, I discovered my love for Cacio e Pepe. With just three main ingredients – Pecorino Romano cheese, black pepper, and pasta – it seems like an easy recipe, but don’t be fooled.
One of the key things I learned from Italian cooks is that the most challenging recipes are often the simplest ones with the fewest ingredients. Quality and type of ingredient is so important - i.e. the type of cheese or the type of tomato. Plus the cooking time is also crucial to achieve the right consistency by letting the excess water evaporate. So, here is the recipe for one of my all time faves.
Ingredients
400 grams of Spaghetti (if you can find Tonnarelli better)
About 200-250 grams of high quality Pecorino Romano cheese (the more aged the better)
Black pepper to taste (better if freshly ground)
Coarse salt (yes you will need some even though Pecorino Romano has lots of salt, otherwise the dish will be bland)
Method
Prepare Ingredients and Water
- Grate Pecorino Romano cheese.
- Bring water to a boil in a tall pot, ensuring the water level does not exceed ¾ of the pot’s height. Use 1 liter of water and 5 grams of salt for every 100 grams of pasta.
Cook Pasta
- When the water boils, add the salt (use half the usual amount due to the saltiness of Pecorino Romano).
- Add pasta and cook until al dente.
Heat Serving Bowl
- 1-2 minutes before the pasta is done, place a serving bowl on top of the pot to heat it.
Reserve Pasta Water
- Reserve some pasta water using a ladle. This starchy water will help create the sauce.
Mix and Serve
- Drain the pasta and transfer it to the heated serving bowl.
- Gradually add grated Pecorino Romano cheese and reserved pasta water, tossing vigorously until you achieve a creamy consistency. Adjust by adding more cheese if too watery, or more water if too dry.
- Season with freshly ground black pepper and toss.

Now that it’s finally starting to get colder and leaves are starting to tumble, I thought I’d help with some of my favourite additions to the garden for this time of year.
Coriander
Coriander is a fantastic herb to grow at the moment. It thrives in the cooler temperatures and adds a fresh burst of flavour to your dishes (unless you’re one of those people who thinks coriander tastes like soap). When planting coriander, ensure it gets partial shade to stop it from bolting too quickly, plus the soil needs to be consistently moist and ensure to harvest the leaves regularly for a continuous supply throughout the month.
Kale
Kale is a cold-hardy vegetable that performs exceptionally well in Trigg's Autumn climate. It's packed with nutrients and can tolerate light frosts, making it an ideal addition to your garden. Plant kale in well-draining soil and provide regular water to keep it healthy and alive. I heard that you should harvest the outer leaves as needed, but you should try to let the inner leaves continue to grow.
Parsley
Parsley is another versatile herb that thrives in the cooler temperatures of May. Whether you prefer curly or flat-leaf varieties, parsley adds a delightful freshness to salads, soups, and sauces. Plant parsley in a sunny spot with well-draining soil and water regularly to keep the soil evenly moist. Pinch off the outer leaves to encourage continuous growth throughout the month. Side note, I LOVE this recipe for homemade garlic bread and it requires fresh parsley - the fresher the better.
Spinach
Spinach, the nutrient-rich leafy green that flourishes this time of year. It's quick to grow and can be harvested multiple times throughout the month. Plant spinach in rich, fertile soil and water consistently to prevent the soil from drying out. Harvest the outer leaves when they reach a suitable size, allowing the center of the plant to continue producing new growth.
Chives
Chives, the herb that adds a mild onion taste to a variety of dishes. They are super easy to grow and thrive in the cooler weather of May. Plant chives in well-draining soil and place them in a sunny spot in your garden. Keep the soil evenly moist and harvest the leaves regularly to encourage new growth.

BEST EVER AUSSIE SAUSAGE ROLLS
I may be the local trusted Trigg real estate agent, but I’m also a Mum. I’m here to help you survive Mum life. Here is one of my favourite sausage roll recipes. It’s a quick and easy dinner idea. Thank me later.
As declared by Taste.com.au. I’ll let you and your family be the judge.
Ingredients
400g sausage mince
300g beef mince
1 brown onion, coarsely grated
1 carrot, peeled, coarsely grated
2 garlic cloves, crushed
35g (1/2 cup) fresh breadcrumbs
1/4 cup chopped fresh continental parsley
2 eggs
3 sheets frozen puff pastry, just thawed
1 tsp sea salt flakes
Kewpie mayonnaise, to serve
Barbecue sauce, to serve
Fresh coriander sprigs, to serve
Method
Step 1
Combine the sausage and beef mince, onion, carrot, garlic, breadcrumbs, parsley and 1 egg in a bowl. Season. Mix until well combined (the mixture will be sticky).
Step 2
Preheat oven to 200C/180C fan forced. Line 2 baking trays with baking paper. Lightly whisk the remaining egg in a bowl.
Step 3
Cut the pastry sheets in half. Place one-sixth of the mince mixture along centre of each piece of pastry. Brush 1 long edge with egg. Fold pastry over to enclose the filling, pressing to seal. Cut each roll into thirds. Place the sausage rolls, seam side down, on the prepared trays. Brush the pastry with egg. Use a small sharp knife to pierce the tops a few times to allow steam to escape. Sprinkle with sea salt. Bake for 35 minutes or until cooked and golden.
Step 4
Drizzle the sausage rolls with mayonnaise and then barbecue sauce. Scatter with coriander sprigs to serve.

UNCONVENTIONAL CHRISTMAS STYLING
So, let’s get this straight, I LOVE CHRISTMAS. However, I am a bit over Christmas decorations in general at the moment.

CRANBERRY GIN FIZZ
Christmas parties in Summer can only mean one thing it’s cocktail season!!! Here’s a sure thing to make the crowd happy!
Ingredients
Cranberry Sauce
100 g fresh cranberries
104 g sugar
59.15 ml water
1 sprig rosemary
6 g orange zest zest of 1 orange
Cocktail Ingredients (4 cocktails)
1 cup cranberry sauce made above
473 ml sparkling water
789 ml orange juice juice of 1 large orange
6 ounces Gin
Ice for cocktail shaker & cocktails
Optional Garnishes
100 g sugared cranberries
4 sprigs rosemary
Directions
First make the cranberry sauce by adding the cranberries, sugar, water, rosemary, and orange zest to a saucepan. Stir together, bring to a simmer, and cook over low heat until the cranberries burst.
Once the cranberry sauce is ready, remove and discard the rosemary sprig and set the sauce aside to cool. While the sauce is cooling, juice the orange.
Add the cooled cranberry sauce to a cocktail shaker and muddle the cranberries to release any of the remaining juice.
Then, fill the cocktail shaker with ice and pour in the fresh orange juice. Add the cocktail shaker lid so it is sealed. Then, shake together until the glass is frosted.
To make one cocktail, add 2-3 ice cubes to a glass and pour ¼ cup of the cranberry orange syrup from the cocktail shaker. Then, add ½ cup sparkling water and 1.5 oz gin to each glass and stir together.
Top each cocktail with desired garnishes such as dried orange slices, sugared cranberries, or fresh rosemary. Then, serve and enjoy!

Renovating doesn’t always need to be a massive investment in time or money. Here are some ideas that can really pack a punch without it hurting the back pocket or turning your home upside down in the process.
Kitchen Skylights
Add some skylights to your kitchen space to really see some wow! It brings in so much natural light, gives the illusion of space, plus it brings the outside in.
Update Your Faucets
Often when renovating, the faucets are a bit of a forgotten element. People can obsess over the colour of the tiles, but then throw in any old chrome faucet.
Think about it as the topping on the cake and can be the hero of your home facelift if you let it.
Wallpaper
Hear me out.
Wallpaper in small spaces, like the powder room can create a real moment of escapism in your home. Done right, it can have elements of being its own art installation.

Pendants are out, sexy, well-placed wall sconces are in.
Up a staircase, above bedside tables, on that wall that everyone has in their home that is the “decorative” section - you know the one, there’s a plant, some sort of console, usually a mirror or an artwork of some kind.

Zhuzh Up Your Hardware
The devil is in the details gang.
To really lift your home, focus on the hardware elements that are so often neglected. Think about curtain holdbacks, power outlets, kitchen cabinetry handles, door handles. There are so many amazingly creative products out there, do some googling and see what you can come up with!

TERIYAKI SALMON BOWLS
Ok, so I’m on the “somewhat healthy” train and this recipe from Gather and Feast is making it easier! Hope you love it too!
Ingredients
Teriyaki Salmon
1 tablespoon honey
2 tablespoons tamari or soy sauce
1 teaspoon mirin
1 teaspoon rice wine vinegar
1 teaspoon sesame oil
1 clove fresh garlic, crushed or finely grated
1-inch piece of fresh ginger, finely grated
1 large salmon fillet, approximately 200g (substitute: chicken breast, chicken thigh, or firm tofu for a vegetarian option)
Ginger Sesame Greens
5 large handfuls of greens (I've used bok choy, gia lan (Chinese broccoli), and snow peas - feel free to use your fav green veg. Other delicious options - broccoli, broccolini, beans, baby spinach, etc.
2 cloves fresh garlic, crushed or finely grated
1-inch piece of fresh ginger, finely grated
2 tablespoons sesame oil
1 tablespoon tamari or soy sauce
Coconut Rice
1 cup jasmine rice, rinsed thoroughly (it’s important to rinse the rice, as this helps make it nice and fluffy)
1 tablespoon coconut oil
Pinch of salt
1 1/4 cup boiling water
Toppings
Toasted sesame seeds or black sesame seeds
4 spring onions, finely chopped
Japanese mayonnaise for drizzling (optional)
Method
Teriyaki Salmon
Preheat your oven to 180°C/350°F.
In a medium-sized bowl, combine the honey, tamari, mirin, rice wine vinegar, sesame oil, crushed garlic, and grated ginger.
Coat the salmon fillet (or chosen protein) with the sauce mixture.
Place the salmon and the combined sauce into a small paper-lined baking dish.
Bake for 15-20 minutes, adjusting time to desired doneness. For a crisp top, consider using the oven's oven+grill function or bake at 180°C/350°F for 15 minutes, then grill for 5 minutes, monitoring closely.
Remove from the oven once cooked.
Coconut Rice
In a small saucepan, combine coconut oil, rinsed rice, and a pinch of salt.
Add boiling water, bring to a boil, then simmer on low heat with the lid on for 15 minutes.
DO NOT remove the lid at any time. We want all the steam trapped in the pot to create that perfectly fluffy rice.
Turn off the heat and let the rice sit for 3-5 minutes, then fluff with a fork.
Set aside.
Ginger Sesame Greens
While rice and salmon cook, heat a large saucepan with sesame oil, grated ginger, and garlic.
Add the greens and sauté on medium heat until vibrant and slightly wilted.
Add the tamari and stir to combine.
To Assemble
Add a scoop of rice to each serving bowl, some salmon and surrounding leftover baked sauce, and arrange the ginger sesame greens.
Top with a sprinkle of sesame seeds, spring onions.
Optionally, drizzle Japanese mayonnaise on top.
SUMMER NECTARINE SALAD
Summer is coming. And boy do we have a show stopper for you.
Ingredients
3-4 nectarines
2 heirloom tomatoes
1 ball of mozzarella di bufala
1 small bundle of basil
6-8 slices of prosciutto
2 heads of little gem lettuce
1/4 cup of extra virgin olive oil
1/4 cup of balsamic vinegar
Sea salt
Freshly ground black pepper
Directions
Rinse and dry the lettuce and rip larger leaves in half.
Slice the nectarines and tomatoes into wedges.
Assemble the salad by laying the lettuce down on the bottom, scatter the tomatoes and nectarines over the lettuce.
Tear the mozzarella over the salad.
Tear leaves of basil over the salad.
Lay slices of prosciutto throughout the salad.
To make the dressing, whisk together 1/4 cup of balsamic vinegar with 1/4 cup of extra virgin olive oil.
Season salad with sea salt and black pepper.

HOW TO GET ALL PALM SPRINGS
Style Source Book wrote a piece on practical tips to achieving a Palm Springs-esque kinda vibe.
